Heres some tips on how to get from one to 99 defence in Runescape.
1-8 Ok for a start train on cows or chickens until lv 8 to 10 this won't take long as they are easy to kill even at a low lv
8-17 then move on you can now kill goblins and by doing so you will get extra xp than as if you was fighting chickens or cows it may get boring towards lv 14 + so you may want to try out some al karid guards but as they come in bunches up to 4 may attack you and then they will probably kill you so I would stick to goblins
17-25 now you can kill al karid guards and get new armour I would suggest mithrill after a while this may be boring to you but I did this until lv 40 but don't do that because it takes to long and you will get bored really fast
25-35 train on al karids a little longer and only do this if you are wanting faster xp and you won't get bored easy then if you think you are ready move on to varrok guards but they may kill you so just a few or you can go into the wilderness and kill ghosts' lv 19
35-40 now is the easy part the xp is only like 5k per lv so you can take it easy you can buy adamant and even rune if you are doing a skill such as woodcutting or mining so that you can buy these things because rune costs 120-140k if you haven't done dragon slayer so you will need to make money at this point you can move into varrok use the brass key which you can buy at the grand exchange for about 36gp and fight hill giants
40-50 you can keep on fighting hill giants now or the lv 28 hobgoblins it is up to you try and avoid the lv 48 hobgoblins as I could only kill 2 at lv 39 if you are a member then you can buy granite armour
50-55 ok now is not a good time to give up so go out there and train on those lv 48 hobgoblins and get your xp up because next you will be fighting something really hard
55-65 this is one of my favourite parts as you can do all the free quests and then do dragon slayer make sure you can kill a lv 82 dragon and maybe use mage while hiding behind a rock if your mage is over 50 if not keep training defence many people think defence is a skill which makes people hit less but actually it just raises your ability to dodge attacks so they hit 0 more often after dragon slayer you are awarded 18k defence and 18k attack xp so that will help put up your defence and if your attack is quite low it will give it a good boost and make it a high enough level to use mithrill maybe or steel steel is more likely
65-80 now you can train on lessers until you cant anymore because there is no more monsters over lv 100 in the game unless you count the lv 126 ghosts In wildy if you feel like waiting for a respawn for ages you can
80-90 train on lessers this is the point where most people give up because they are not members and don't want to pay but don't give up yet keep going
90-99 train on anything you like and put up different skills congratulations on getting 99 defence and getting the blue skill cape which defends from a whole lot of arrows and a giant weight from the sky that is the thing the skill cape does and puts that skill to 100

this is a gr8 guide but i agree that 1-10 train on chickens-but try to advise ppl to become members and do creature of fenkenstrain quest then training on experiments is a blast!
ps: experiments have 100hp and give 400xp (not on controlled) im training on experiments and currently going for 70 def =]
im making almost 3000xp evry 5mins thats around 36000xp an hour!!!
